The piece
Millets are what these soils actually want to grow. The problem has never been the crop — it is that the farmer sells at the farm gate, at the price the first buyer offers, in the week everyone else is also selling.
The pantry box buys directly from the farm at an agreed rate, and the cleaning and packing is done by a local unit rather than in a city.
Grain is a seasonal product. When a variety is out of season we say so instead of substituting it quietly.
